Preheat oven to 350°F (176°C) and spray a loaf pan with non-stick cooking spray or grease with butter and set aside.
In a medium mixing bowl, whisk together flour, baking soda and salt; set aside.
Melt butter, and let rest to cool slightly.
In a large mixing bowl, add the mashed banana (if previously frozen then thawed; mash bananas with the liquid – this has tons of flavour).
Add granulated white sugar, eggs, and pure vanilla extract; stir until well combined, then mix in butter.
Stir in flour mixture and mix together with a spatula until well combined.
Add in the chopped Oreo cookies.
Mix together until evenly distributed.
Pour the batter into prepared loaf pan and bake for 50 – 60 minutes or until golden brown on top and a toothpick inserted in the center of the bread comes out clean.
Let cool for 10 minutes in the pan before transferring to a wire cooling rack to cool completely.
